A Journey Along El Camino Real
This light roast from Finca Miravailles lets the bean do the talking. Golden honey sweetness leads, followed by a soft citrus brightness and a caramelized sugar finish. The washed Bourbon cultivar keeps everything clean and transparent, and the high elevation gives the cup enough structure to hold those delicate flavors together without being thin.
El Camino Real, the Royal Road, was the route that connected El Salvador's highland coffee farms to the capital and the coast. Before trucks and highways, this was how Salvadoran coffee made it to market. The farms along this road, including those in the Apaneca region, built the country's reputation as a serious coffee origin. That history is still in the cup.
Brewing suggestions: Pour over or Chemex will bring out the citrus and honey. Aeropress works well if you want a slightly heavier body without losing the brightness.
