Plum honey leads, followed by a purple rose floral quality that stays in the background without taking over. There's a cherry-vanilla cola note in the middle of the cup that gives it depth, and it finishes with a pink starburst candy sweetness. The natural process is doing a lot of the work here. Drying the cherries whole concentrates the fruit sugars into the bean, and at this light roast level, all of that comes through.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eTis Abay\u003c\/em\u003e, the Blue Nile Falls, drops over 40 meters into a gorge and throws up a wall of mist that the locals call \"Great Smoke.\" That's a good way to describe what happens when you grind this coffee. The aromatics hit before you even brew it. Ethiopian naturals from Yirgacheffe are famous for that kind of intensity, the way the fruit and floral notes announce themselves before the water touches the grounds. We named this roast for \u003cem\u003eTis Abay\u003c\/em\u003e because the experience is similar. You know what's coming before it arrives, and it still surprises you.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eMeet the Producer\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis Grade 1 lot comes from the Dumerso area near Yirgacheffe, coordinated by producer Hirut Berhanu (known locally as Betty). Cherries are aggregated from small plots in Dumerso and nearby Chito, with pickers from the local St. George's church community. Hirut and her partner Mahder recently built a health clinic and a daycare for the Dumerso community.
